Cascara - coffee berry tea

In the heart of lush coffee plantations, Cascara is a testament to the fascinating synthesis of nature's abundance and flavor.

Although often overlooked in the coffee world, Cascara is a true gem cultivated by nature. Cascara - the dried husk of the coffee berry, from which tea with a unique taste is prepared. The name of this tea is derived from the Spanish word meaning husk or peel.

But let's start from the beginning: the coffee bean is actually the stone in the coffee berry.

Coffee berries growing on coffee trees are usually red, sometimes yellow or orange. Inside these berries are two seeds, which we call coffee beans, and they are surrounded by a pulp and a husk.

The coffee berries, picked for the precious beans, are graded and selected at the optimal stage of ripening. After picking, they are dried for 7 to 15 days, and when 12% moisture is reached, the berry flesh is separated from the bean. Coffee berries are usually considered a by-product of coffee production and thrown away as waste or composted, so drinking Cascara is not only a creative, but also an environmentally friendly way to take full advantage of the bounty of the coffee tree.

Cascara has long been a favorite in Yemen and Ethiopia, and recently coffee growers in South America (especially El Salvador and Bolivia) are increasingly exporting this product. As for the taste characteristics, Cascara tea is a drink with a delicate fruity taste, which also retains a small amount of caffeine. It can be prepared on its own, but it is usually flavored with various herbs and spices, thus creating a drink with an exceptional taste and a light tonic.
